Fresh fava beans are (along with English peas) a sign of spring and summer. After picking the beans in the pod gently poach in boiling water. Then sautéed with your favorite seasonal veggies : spring onions, carrots, potatoes or sunchokes, spinach and fresh herbs for a colorful and tasty summer plate of veggies.
